I don’t really know much about Dominica. When thinking of a Caribbean vacation one often first thinks or Bahamas & Jamaica. From what you describe, Dominica sounds worth considering.
Dominican cuisine is similar to that of other Caribbean countries. Common main courses comprise meat (usually chicken, but can be goat, lamb, or beef) covered in sauce. The sauces are either spicy pepper sauces, or concoctions made from local fruit.
Locals are friendly, rainbows are breath taking, humming birds everywhere.

We stopped in Dominica on a cruise so we only had a few hours to explore this unique island. Snorkeling in Champagne Bay is an experience I will never forget. I felt like I was in an aquarium, swimming through all the bubbles.
